Twisted Pizza Sticks
Recipe in English:
Ingredients:
Prepare Pizza Dough:
-Sugar 1 & ½ tsp
-Khameer (Instant yeast) 2 & ½ tsp
-Doodh (Milk) ½ Cup
-Fine atta (Flour) sifted 1 & ½ Cup
-Maida (All-purpose flour) sifted 1 & ½ Cup
-Namak (Salt) 1 tsp or to taste
-Cooking oil 2 tsp
-Lukewarm water ½ Cup
-Cooking oil 1 tsp
Prepare Chicken & Cheese Filling:
-Boneless chicken boiled & shredded 150g
-Tikka masala 1 tbs
-Cheddar cheese grated ½ Cup or as required
-Mozzarella cheese grated 1 Cup or as required
-Namak (Salt) ¼ tsp or to taste
-Dried oregano 1 tsp
-Fresh parsley chopped 1 tbs
-Fresh basil chopped 1 tbs
-Anday ki safedi (Egg white) 1
Assembling:
-Pizza sauce 3 tbs or as required
-Makhan (Butter) melted
-Lal mirch (Red chilli) crushed
-Dried oregano
-Makhan (Butter) melted
Directions:
Prepare Pizza Dough:
-In a small jug,sugar,instant yeast,milk & whisk well,cover & let it rest for 4-5 minutes.
-In a bowl,add fine flour,all-purpose flour,salt & mix well.
-Add cooking oil & mix well until it crumbles.
-Add yeast mixture & mix well.
-Gradually add lukewarm water & knead until dough is formed,grease dough with cooking oil,cover & let it rest for 1 & ½ hour (warm place).
Prepare Chicken & Cheese Filling:
-In a bowl,add chicken,tikka masala & mix well.
-Add cheddar cheese,mozzarella cheese,salt,dried oregano,fresh parsley,fresh basil leaves,egg white, mix well & set aside.
-Sprinkle dry flour and knead dough again until smooth (2-3 minutes),sprinkle dry flour and roll out in rectangle shape (12 x 18 inch) with the help rolling pin.
Assembling:
-On half side of dough,add & spread pizza sauce,add prepared chicken & cheese filling & press gently.
-Now cut the dough,flip over the filling and cut in 1-inch thick strips.
-Now press a wooden skewer on each strip and twist gently.
-Place all twisted strips on a baking tray lined with butter paper.
-Brush melted butter,sprinkle red chilli crushed and dried oregano (makes 13-14).
-Bake in preheated oven at 200C for 12 minutes (on both grills).
-After baking,apply melted butter.
-Serve with tomato ketchup or chilli garlic sauce!

-Chotay jug mein cheeni,khameer aur doodh dal ker ache tarhan whisk ker lein aur dhak ker 4-5 minutes kliya chor dein.
-Bowl mein fine atta,maida aur namak dal ker ache tarhan mix karein.
-Cooking oil dal dein aur crumble hunay tak ache tarhan mix karein.
-Khameer mixture dal ker ache tarhan mix ker lein.
-Thora thora ker ka neem garam pani shamil karein aur ghond ker dough tayyar ker lein,dough ko cooking oil sa grease ker lein aur dhak ker garam jagha per 1 & ½ hour proof hunay kliya rakh dein.
Prepare Chicken & Cheese Filling:
-Bowl mein chicken aur tikka masala dal ker ache tarhan mix ker lein.
-Cheddar cheese,mozzarella cheese,namak,dried oregano,fresh parsley,fresh basil leaves aur anday ki safedi dal ker ache tarhan mix ker lein & side per rakh dein.
-Maida chirak dein aur dough ko smooth hunay tak dubara dhond lein (2-3 minutes),maida chirak dein aur rolling pin ki madad sa rectangular shape mein bail lein (12 x 18 inch).
Assembling:
-Dough ki half side per pizza sauce dal ker pheela lein aur tayyar chicken & cheese filling dal ker evenly pheela lein aur gently press ker lein.
-Dough ko cut ker lein aur flip ker ka ka filling ka upper rakh dein phir 1-inch thick strips mein cut ker lein.
-Her strip ko wooden skewer sa press ker lein aur gently twist karein.
-Tamam twisted strips ko baking tray (lined with butter paper) per rakh dein.
-Melted makhan laga ker upper sa lal mirch crushed aur dried oregano chirak dein (makes 13-14).
-Preheated oven mein 200C per 12 miutes kliya bake ker lein (on both grills).
-Baking ka bad melted makhan laga lein.
-Tomato ketchup or chilli garlic sauce ka saath serve karein!
