Blended masala Ingredients:

Cardamom – 4
Cinnamon – 1 inch
Cloves – 6
Cumin seeds – 1 tbsp
Star Anise – 2
Kapok buds – 3
Coriander seeds – 2 tbsp
Black pepper – 1 tbsp
Fennel seeds – 1 tbsp
Bay leaf – 1
Dry red chillies – 8
Saute the above Ingredients and Let it cool
Blend above Ingredients into fine powder

Chettinad chicken fry preparation:

Sesame Oil – 4 tbsp
Fenugreek seeds – half tsp
Splited Black gram – 1 tbsp
Cashews (20-30)
Finely chopped onions – 100gms
Ginger & Garlic paste – 2 tbsp
Turmeric powder – 1 tsp
Salt
Red chilli powder – 1 tbsp
Curry leaves – 10 leaves
Chicken – 1 kg
Green chillies – 4 (If you want more spicy)
Blended masala – 1st layer
Blended masala – 2nd layer
Blended masala – 3rd layer
(5 mins gap for each layer)
Coriander leaves (For garnishing)
